Eden Origins

‘Origins’ is a nod to the shared DNA of apples across time and continents. This cider is made from varieties treasured for their contributions to cider, baking, sauce, and a few for eating out-of-hand.

All the apples for this cider come from small orchards, and consist of historic English and New England varieties.

Tinston Anatomy Sparkling 2017

Made from 100% freshly-pressed Bramley apple juice. After a primary alcoholic fermentation, it’s left on its natural yeast lees to develop body and complexity, after which it’s naturally settled and minimally filtered. After bottling, it undergoes a secondary fermentation that creates the natural fizz. However, the real magic is the in-bottle on-the-lees ageing which Anatomy undergoes for 12 to 24 months. The  length of ageing adds layers of complexity and flavour to create a true stand-out cider with a style that’s akin to a top quality champagne grape wine.

Once Upon A Tree Tidnor Wood Oak-Aged Still Cider 2018

Made from a single vintage, this 100% fresh-pressed fruit, never-from-concentrate cider combines a field blend of bitter sweet apples grown at Tidnor Wood Orchard, part of the original National Collection of cider apples, with dessert apples from Once Upon A Tree’s Dragon Orchard.

Complex and aromatic, the style and presentation of this cider is designed to share with family, friends – and food!

Brännland Claim Iscider 2017

Claim Iscider claims new territory for ice cider. An ice wine made from 100% Swedish apples, concentrated and elevated using the natural winter cold of northern Sweden. A true and original expression of the country, its apples and the family of ciders from which it was born.

White flowers on the nose and juicy, sweet, fresh acidity on the finish. Claim evokes lightness and light, spring and summer, in contrast to the flavours and scents of late autumn and winter apples associated with the company’s traditional ice cider.

Whilst holding true to the Iscider methodology, 100% fresh picked Swedish apples, this selection is a journey of discovery. IsCiders traditionally are rich and sweet, naturally produced, however Claim is a revelation. It reveals that delicacy and precision are things of beauty, which show themselves through the apple communicated by fermentation and the application of careful winemaking standards. Whilst this does not conform to the Quebec standards, it does write its own rule book, thus claiming new territory for Iscider.

Tasting Notes

Eden Origins

Notes of apple sauce, biscuit and green hay, the apple blend used provides a balance of aromatic fruit character, tannin, acidity, and enough original sugar to achieve sufficient alcohol for body, and of course for pleasure. Fermented using wild and cultured yeasts, then aged and blended, followed by bottle conditioning to produce a classic dry and refreshing cider.

Bright, fresh, yet delicate, crisp English apple flavours that you’d expect from a well-crafted cider. It also comes with an elegant mousse to match with the yeasty, bready, biscuity and buttery notes long from ageing in-bottle on the yeast lees. Many have described this cider as apple champagne.

Once Upon A Tree Tidnor Wood Oak-Aged Still Cider 2018

Aged on its own lees and new French oak for 9 months, this partial wild ferment & unfiltered cider is golden brown with a slight haze. Spice aromas on the nose of clove and vanilla combined with orange peel, honey and lychee. A rich mouth-filling still cider with soft creamy vanilla tannins, and buttery spiced toffee-apple fruit.  Bone dry, but ripe, soft and fruity leaving generous tannins to the finish.

Pale golden, straw-coloured in appearance with a fragrant and aromatic nose with notes of tea, honeysuckle, strawberry & white flowers. Golden kiwi and white grapes on the palate, with pomegranate and rose petals on the long, pleasing juicy finish and a sweet rosé or blush wine character.

Often enjoyed in a flute glass with light canapés, but a great pairing with fresh fish dishes. The bubbles and crisp acidity balance well with the freshness of a simple smoked salmon or some mackerel pâté.

Once Upon A Tree Tidnor Wood Oak-Aged Still Cider 2018

Even though this is not sweet, try pairing with Stilton, or other strong, salty blue cheese.  Works well with smoky Baba Ghanoush or a Moussaka. Or be classic with roast pork with crackling!

Brännland Claim Iscider 2017

Claim not only claims new territory for ice cider, it also claims new food matching territory: from the classic repertoire – apple desserts, gooseberry fool with home-made shortbread, and summer fruit puddings. With cheese – lighter blue cheeses such as Gorgonzola, and soft-medium goats cheese. Alternatively – try with salt, pepper & chilli chicken pieces, paneer tikka, Thai prawns with a banana and cucumber salsa.
