Gospel Green Brut 2018

A ground-breaking dry cider produced in Hampshire uses the same production technique as Champagne. Luxurious to savour, with just the right balance of sweetness. The pure and fresh flavour of apple with the double fermentation process adds to its complexity. Cider connoisseurs will adore it.

The Newt Fine Cyder 2020

The 2020 vintage fine cyder has been made with specially selected dessert apples using precise wine-making techniques and slowly cold fermented in the cellar. The result is a super-fresh elegant cyder.

Queen Of The Orchard

English cider that’s steeped in our country’s heritage, ingrained in who we are, produced with 100% apples and treated with as much thought and care as with grape wine (from an award-winning wine producer). The approach is of minimal intervention, with the aim of delivering the orchard’s terroir in the bottle using the method most suited to the apple varieties used

Welsh Mountain Redstreak 2020

Made mostly from the lovely, soft, bittersweet Somerset Redstreak apple, complemented by the acidity of the fresh and highly-scented Brown’s apple. This makes for a perfect for early Spring bottling and a pleasant lower in alcohol cider option.

Once Upon A Tree The Wonder Pear Ice Wine 2016

The juice of handpicked, late harvested Conference and Comice Pears is filtered, frozen and gently thawed to allow the sugars, colour and flavour to be extracted, leaving water behind as ice – a process called cryo-concentration – which concentrates the juice to a potential alcohol of 20–22%.

This juice is fermented using champagne yeast to 10 – 12%ABV over 3 to 4 months. At this stage the ferment is stopped and the resulting product is filtered sterile, bottled and further aged in bottle before release.

Tasting Notes

Gospel Green Brut 2018

Aromatics of elderflower, brioche and green apples. Crisp with a light acidity and a slight earthiness coming through on the palate. Smooth with a rounded finish and a long-lasting mousse.

The Newt Fine Cyder 2020

A ripe pear, melon and almond bouquet balanced by a palate of crisp apple.

Tinston Gateway English Sparkling Cider 2019

IWSC Bronze medal-winner in 2021, the flavour comes from the apples used – a blend of Russet, Cox, Worcester and Bramley – and the méthode traditionelle process with 18 month ageing on the lees in the bottle for added complexity.. The dry taste profile is maintained with no sweetening added in the dosage.

Queen Of The Orchard

Made from 75% Spartan and 75% Dabinett cider apples, fermented and matured in French Burgundian oak using a minimalist winemaker approach. The process uses champagne yeasts and the cider undergoes full malolactic fermentation in barrel with a secondary fermentation in the bottle to produce a gentle fizz that heightens the complex aromas of cooked apple, cinnamon and biscuit.

Welsh Mountain Redstreak 2020

A nose of vanilla rum sweetness with notes of apricot, juniper, jasmine and cedar. Pressed in 2020 and bottled young to allow the residual sugar to ferment in the bottle to create a light effervescence. The acidity from the Brown’s apple and the light natural carbonation complement the soft tannins of the Somerset Redstreak to create a beautifully balanced cider.

Once Upon A Tree The Wonder Pear Ice Wine 2016

Very powerful, big palate with intense flavours of apricot, quince and a hint of soft caramel.  Sweetness, acidity and a long, soft finish, perfectly balanced.

Best drunk in a tulip-shaped glass with roast chicken, or roast pork with roast potatoes, grilled asparagus. Great with soft cheeses, such as Brie.

Welsh Mountain Redstreak 2020

Pairs easily with most foods: great with a BBQ, roast or stir fry, its acidity and sparkle also nicely cuts through heavier dishes.
