Somerset-grown quince, co-fermented with keeved* bittersweet cider apples. This fruity cider brings together these cider apples with their pome family third cousin, the quince. The unique tart astringency of the quince is balanced here by the natural fruity sweetness of Pilton’s classic keeved cider.
*Keeving is an artisan cider-making technique used to create a natural cider without sweetening or pasteurisation. Wild yeasts, cool cellars and low nutrient orchards are all key elements in the process. Only 100% fresh pressed cider apples are used, no sugar, no water, and nothing else.
The unique tart astringency of the quince is balanced here by the natural fruity sweetness of Pilton’s classic keeved cider. Slightly sparkling with a golden hue, the nose is aromatic, bound with sweet apple fruit, whilst on the palate the tart quince provides the acid framework around which the delicious baked apple fruit and spice hangs, lingering long in the mouth.
A taste sensation – the quince bringing a whole new world of piquancy in terms of flavour on the nose and palate, adding a dimension which matches perfectly with smoked salmon, aromatic Thai dishes, and can also cut through fattier dishes like belly pork.
