A rich dessert ice cider made from freeze-concentrated apple juice. Autumn-pressed bittersweet cider apple juice is first keeved and then frozen.
In early January it is carefully thawed to extract a rich juice leaving behind the still-frozen water. This concentrated juice is then slowly fermented and matured for nine months.
Rich, Christmas cake, burnt orange and brown in colour, suggesting deep, sweet intensity. A rich treacle apple nose backed by a balancing pithy, leafy note. Intensely sweet and rich on the palate at first, showing all its profound, concentrated burnt sugar and apple flavour, but then balanced by apple tannins in the finish which allow the fruit to resonate into a dreamland of flavour.
A great match with classics like sticky toffee pudding, or savoury plates such as rich pâtés and liver dishes, as well as aged, creamy and rich blue cheeses.
