This cider co-ferment builds on a passion to raise the profile of cider as a wine alternative, which combines winemaking techniques and grape bi-products with cider. Made from 100% not-from-concentrate fruit, from a single vintage of Dabinett and dessert apples, fermented over Bacchus wine yeast lees and aged for 9 months.

Vibrant dark pink in appearance, with aromas of strawberry, honey, as well as hints of vanilla spice and toffee apple… this cider presents an excellent fusion of red berry fruits from the Pinot grape and an apple richness from the Dabinett apples to give the palate a huge mouthful of fruit, enlivened by a gentle spritz. This is an altogether grown up, sophisticated approach, with huge length and a soft dry finish.
Delicious with seared scallops… a great match with salmon or lobster, it also works well with duck and rare-cooked lamb.
