A lightly sparkling wild-fermented perry made mainly from Oldfield, Blakeney Red, Huffcap and Gin pear varieties at Killahora’s cidery near Cork. The fermentation is completed in bottle in a ‘pet-nat’ style (naturally sparkling with less fizziness) to allow the taste of the pears to shine through in their purest form.
Nothing is rushed at Killahora Orchards: the fruit is hand-picked and this perry is made in small batches, then allowed to ferment and mature which creates complexity and real nuances of flavour.
Lightly sparkling and pale golden in appearance, it has a nose of pear, apple blossom, and lemon peel. Light, elegant and refreshing on the palate, with soft, moosey bubbles, its taste of citrus and gooseberry has an interesting minerality and a well balanced finish.
Serve chilled as an aperitif., it also pairs beautifully with seafood and goes especially well with oysters. A great partner with Asian food, too.
