This small-batch imperial cider is made from 100% Vermont-grown, Northern Spy apples, a renowned early 19th Century baking variety. Cryo-concentrated in natural cold winter weather to 22 Brix. Aged on a small amount of French oak for 6 months then filtered sterile and carbonated.
Northern Spy is an apple with great acidity and a flavour that’s brimming with autumn spices. Balanced here with a natural residual sweetness through arrested fermentation to create a highly fruity, smooth cider.
