The apple trees for this still cider were planted on the west-sloping meadow of an abandoned dairy consisting of thin and granitic Appalachian loam. Made from twenty varieties of late-harvested apples with the combined juice left to mature in stainless steel. Unfiltered, un-fined, it’s both earthy and wild, yet gracefully supple.

Produced from a field blend of apple varieties estate-grown at Eden’s biodynamic orchard in West Charleston, Vermont. Spontaneously fermented and racked only once from tank to bottle in June 2017, and then aged 18 months in bottle to allow its powerful tannins and acidity to integrate and mellow naturally. It is unfiltered and un-fined, with no added sulphites.
The apples used in this cider are:Esopus Spitzenburg, Golden Russet, Muscadet de Dieppe, Michelin, Grimes Golden, Stembridge Cluster, Northern Spy, Orleans Reinette, Egremont Russet, Blue Pearmain, Rhode Island Greening, Ashmead’s Kernel, Baldwin, Spartan, Rubinette, Zabergau Reinette, Newtown Pippin, Tremlett’s Bitter, Liberty, Reinette Clochard.
Enjoy as you would a bold white wine. It pairs particularly well with rustic roast pork, mustard-braised guinea fowl and cassoulet.
