What makes something go well with a spicy, savoury- tasting haggis with its dousing in whisky?

A haggis packs an assertively meaty and savoury flavour with its unique blend of spices, including pepper.

So there’s a lot going on with a haggis and it really requires we need a well-structured wine with some sturdy flavours and just a touch of sweetness. The unique cidermaking process of keeving (as in the IWSC trophy and gold medal-winning Llanblethian) is ideal for this, but there are others too.

Brännland Pernilla Perle 2017 

The balance between sugar, alcohol and fruit has been joined by a length that holds great promise for future development and ageing.

Blue Aurora Midnight Blueberry Wine 

Each bottle contains 1.5 kilos of blueberries which are substrate-grown in buckets under polytunnels and then picked by hand between July and October. The blueberries are gently pressed and then the free run juice sits on the blueberry skins in tank for 6 weeks with the addition of oak chips. After fermentation the wine is racked, filtered and bottled.

Berryland Apple and Cabernet Franc Apple Co-Ferment 2020 

The skills of the winemaker are apparent in this interesting, vibrant-colour cider co-ferment that marries apple fruit with the Cabernet Franc grape, this cider shows great balance.

Templar’s Choice Naturally Sparkling Medium Cider 

Freshly pressed apple juice is keeved on its own yeasts for a slow fermentation throughout the winter months and then bottled at the right degree of specific gravity for its dry taste style. The fermentation is controlled by keeving, a little racking, together with the quality of fruit to achieve a well-controlled secondary fermentation in the bottle to provide a natural effervescence after 6-8 weeks.

Made as a ‘keeved’ cider in the French style from late ripening varieties Ashton Brown Jersey, Black Tom Put, Bramley, Dabinett, Golden Knob, Sweet Copin & Yarlington Mill.

Brännland Iscider Barrique 2018 

Every year Brännland Cider sets apart some of its ice cider for barrel ageing. 12 months on a barrel softens and integrates the high acidity and fresh apples notes with the natural residual sugar to create a deeper, more complex ice cider, darker both in colour as well as on the palate.

Brännland Pernilla Perle 2017

Appearance: lightly sparkling, golden hue, crystal clarity. Nose: nectarine, pear, apple blossom, honey, vinous. Palate: pear, ripe apple, lychee, orange, almonds and white cherries. Light lingering structure, slightly grippy. Sweet attack with really juicy fruit flavours, nice acid profile on finish.

Blue Aurora Midnight Blueberry Wine

Ripe cherry and plum nose with a subtle hint of vanilla and thyme. Full bodied, ripe rich berries on a bed of vanilla notes and a slight warming spice on the palate. The finish is long and smooth, with a healthy kick of tannins

Berryland Apple and Cabernet Franc Apple Co-Ferment 2020

Lightly sparkling with a colour of vibrant, effervescent purple red and a delightful nose that hints at fresh currants, the palate shows sweet fruit upfront, yet turns this round to finish dry.

Templar’s Choice Naturally Sparkling Medium Cider

An extremely well-balanced Normandy ‘méthode traditionelle’ medium pure juice naturally sparkling cider made with apple varieties, the front palate has slight apple sweetness countered by back palate acidity and moderate tannins. A classically balanced cider.

Llanblethian La Petite Grange du Cidre 2020

Whilst some may describe it as sweet, it’s perhaps more medium than sweet – and utterly delicious for all that – its sweet flavour is balanced with tannic body where the Yarlington Mill shines through: honeyed sweetness comes from the Golden Knob and the fresh apple sharpness from the Bramleys.

Appearance: amber crystal clarity. Nose: forest floor with touches of grassiness, walnuts, browned butter and toffee. Palate: sweetness balanced by juicy and tart with a long structured finish.

Food Pairing

Dry and sweet at the same time, its off-dry character makes it well suited for a wide variety of gastronomic pairings. As an aperitif on its own and, apart from haggis, right through to heavy continental-style pork dishes and a range of desserts.

Blue Aurora Midnight Blueberry Wine

“Och aye the noo!”, this sits well with the spicy savouriness of haggis. Also pairs perfectly with steak, mushroom risotto or as an accompaniment to a cheese board.
